Add oil and butter to pan and heat over medium heat.
Begin adding spinach leaves to fill pan. Depending on size of pan you may need to add the spinach in 2 or 3 batches. Cover pan to cook faster. Cook 1-2 minutes until leaves begin to wilt and add more uncooked spinach to pan with some salt.
Add a small amount of water to prevent spinach from burning.
When all spinach is wilted, remove from heat and serve.
