Begin with fresh strawberries. Wash and dry thoroughly – this is important so the chocolate sticks.
Melt semi-sweet or milk chocolate in a double boiler over low heat. Water is placed in the bottom pot which gently heats the chocolate without burning it. You also can use a small pot in a larger pot of water for the same effect as a double boiler.
Insert toothpicks in strawberries and dip in chocolate.
Place on tray lined with parchment paper and dry in refrigerator for several hours. You can decorate with nuts, sprinkles, etc. before they dry.
Decorate with white chocolate if desired. Melt 1/2 cup while chocolate chips in double boiler. Add melted chocolate to pastry/icing bag with smallest tip and drizzle over berries.
